Strawberry Rhubarb Crumb Bars feature a delightful mix of sweet strawberries and tangy rhubarb layered between a buttery crust and golden oatmeal topping.

This dessert brings together fresh, seasonal fruit with a melt-in-your-mouth crumble, making it an ideal treat for gatherings or family snacks.

Preparation is quick — just 15 minutes — and the bars bake in under an hour, yielding up to two dozen squares.

The crust combines flour, brown and white sugar, cinnamon, and cold butter for a rich base, while the filling is bursting with vibrant strawberries, sliced rhubarb, and a touch of orange zest.

Sprinkled with oats, the crumble browns beautifully in the oven, creating a satisfying contrast to the juicy fruit center.

Let the bars cool before slicing for a perfect sweet-tart bite every time.
