Classic Beef & Barley Soup: A Hearty Recipe for Chilly Evenings

Ingredients:

 

- 1 lb beef stew meat, cubed

 

- 1 tbsp olive oil

 

- 1 onion, chopped

 

- 3 carrots, sliced

 

- 2 celery stalks, sliced

 

- 2 cloves garlic, minced

 

- 6 cups beef broth

 

- Âľ cup pearl barley

 

- 1 tsp thyme

 

- 1 bay leaf

 

- Salt & pepper to taste

 

Directions:

 

1. Heat olive oil in a large pot over medium heat.

 

2. Brown the beef on all sides.

 

3. Add onion, carrots, and celery; cook until vegetables begin to soften.

 

4. Add garlic and cook briefly.

 

5. Stir in broth, barley, thyme, bay leaf, salt, and pepper.

 

6. Bring to a boil, reduce heat, and simmer for 45–60 minutes, until the beef is tender and the barley is cooked through.

 

Tip: Serve with warm bread or rolls, and enjoy leftovers the next day when the flavors deepen even more.
